Carr Valley Cheese — over 100 years old — was founded in 1902. It is the legacy of 4 generations of Cheesemakers in La Valle, Wisconsin. Lamer's Dairy, founded in 1913, produces the best milk products in all of Central Wisconsin. It one of Wisconsin's quintessential Dairy Farms, located in Appleton — just north of Lake Winnebago. Lamer's Dairy delivers fresh milk and creams to Sauk-Prairie Grill three times a week - so you know it's always fresh. Lamer's Dairy distributes their dairy products to the public under the name "Dairyland's Best" and is sold in grocery stores throughout Wisconsin.
Lamer's Dairy proudly boasts five generations of family tradition — producing the absolute highest quality milk and dairy products. Always produced with respect to the legacy of their forefathers, Lamer's Dairy produces their milk products with unwavering pride in their profession with the utmost respect for their ancestors and their family tradition.
Lamer's Dairy was started by Jacob Lamers, in 1913, in the village of Kimberly, Wisconsin. In the early days, raw milk was distributed to the villagers in "preserve cans" which was personally delivered to families, schools and businesses — "farm-fresh to table", every morning.
A few years later, Lamers Dairy began to deliver their milk using a horse and buggy as their milk cart. Then in 1919, they purchased their first milk truck for making daily deliveries. In 1931, Lamers began selling their milk products with the first glass milk bottles, imprinted with their logo. The following year, they purchased their first mechanical refrigeration equipment — to ensure that their milk was always kept at the ideal temperature to maintain the freshest possible milk in the village.
In 1933, the traditional way of hand bottling milk was transformed to an automatic bottling system, one of the first of its kind in Wisconsin, vastly improving Lamers Dairy efficiency and productivity. One year later, Lamers installed equipment to begin to pasteurize their milk. Then, in 1941, they introduced homogenized milk to the local market while upgrading their facilities - nearly doubling the size of their building.
Lamer's Dairy expanded their building once again in 1950, installing quality testing for all of their dairy products. Finally, in 1998, after 48 years of tremendous success, building a powerful, respected brand, the Lamers family moved their production facility to its current location on Speel School Road, in Appleton, Wisconsin.
Lamer's Dairy believes in supporting local, family dairy farms — who produce only the finest quality milk with pride and care. They work with a few carefully chosen family farms located within a 30-mile radius of their production center. They believe in supporting their local community and pay their local milk providers a premium price for producing the highest quality milk from healthier cows.
All of the milk and dairy products offered by Lamers Dairy are "Farmer Certified rBGH-Free. This means that their network of local dairy farmers never use artificial hormones or growth stimulants so that their cows produce more milk. It is a Lamers Dairy family tradition - to produce milk the natural, traditional way. This is why their milk products are renowned and respected all over Wisconsin.

Niman Ranch is a truly unique brand with a long and rich history of ranching sustainability, humane animal care and supporting a vast network of family-owned farmers and ranchers.
Niman Ranch's Mission is to "raise livestock traditionally, humanely and sustainably to bring you the finest tasting meat in the world."
Niman Ranch is the culmination of animal welfare expert Dr. Temple Grandin, whose philosophy was to treat all animals with respect and the utmost care - including how they were raised, how and what they were fed and also raising them without the use of growth hormones or other chemicals that might enhance their growth.
Beginning in the early 1970's as a small eleven-acre ranch in a small Pacific Coastal town just north of San Francisco, California. All their cattle was raised using traditional, humane ranching methods which give a unique flavor to their premium beef, pork, and lamb.
Over the past nearly 50 years, Niman Ranch has developed into a network of hand-selected, family farms and ranches that utilize the same "Certified Human" breeding methods developed by Dr. Grandin so many years ago.
All of their animals are grass-fed or are fed wholesome all natural feed; including, whole grain feeds and all-natural, healthy and organic foods. All animals are raised outdoors, either in open fields or deeply bed pens so that they live a comfortable life, not crammed into cages where they can barely move - as so many other ranchers choose to raise their animals.
None of the livestock raised within the Niman Ranch network is given the controversial Bovine Growth Hormone — which is used by so many farmers as a way to grow their cattle in a faster manner. Bovine Growth Hormone, also known as "Bovine Somatotropin" is a "peptide hormone" that naturally occurs in cows — where it is naturally produced in small quantities by the cow's pituitary glands. The problem, many experts say, is that some farmers give very high doses to their livestock, which scientists now believe to cause diseases not only in cows — but also the people and animals that consume this controversial hormone.
Independent farmers and ranchers all across the United States, who passionately believe in Dr. Grandin's humane ranching methods have followed his example and are raising their own livestock utilizing Niman Ranch's "Certified Humane" ranching traditions. In fact, as of 2018, Niman Ranch has grown into a network of over 720 independent farmers and ranchers across America.
Starting in September of 2016, 100% of Niman Ranch's beef, pork, and lamb are now labeled as Certified Humane®.
"Never-Ever Natural" is a phrase coined by Dr. Grandin which means that all of their animals are NEVER given antibiotics or artificial hormones. Ever. It also means that all animals are fed a 100% vegetarian diet. It also means that each and every farmer and rancher within the Niman Ranch network practices "sustainable agriculture". For ranchers and farmers, this means that the owners of the land where their livestock is raised do not use any chemical fertilizers or unnatural additives. This natural practice of raising livestock allows the animals to live a life where they engage in natural behaviors — living outdoors and interacting naturally with their mates.

Sauk-Prairie Grill proudly uses one of Wisconsin's oldest and most trusted brands for its supplier of fresh fruits, fresh vegetables, and nuts.
V. Marchese was founded by Vito Marchese, in 1934, in a small building on Milwaukee's Commission Row — one of the last areas in Milwaukee's Historic Third Ward to be rebuilt and renovated. Located in the 300 block of North Broadway and known as a famous marketplace by old-timers in Milwaukee, Commission Row has great historical resonance with the local shopkeepers, suppliers, restaurants and all fans of fresh foods brought into Milwaukee directly from Lake Michigan.
The pace of development in the Third Ward began to accelerate, starting in the mid-1990's. Former factories and warehouses were quickly being converted into urban housing, business offices, local shops, and restaurants. Centered on North Broadway between E. St. Paul Avenue and E. Buffalo Street, the renovation of Commission Row was one of the largest redevelopment projects ever undertaken in Milwaukee. Most of the buildings were redeveloped between 2003 and 2008.
For more than a century, Commission Row was the most famous place where fruit and vegetable wholesalers sold their products to Milwaukee area grocers, restaurant owners, and even pushcart vendors.
Since 1934, this is where V. Marchese has been selling a huge variety of fruits, vegetables and nuts — not only from local vendors — but also from International Distributors who bring their products directly into Milwaukee from Lake Michigan.
V. Marchese buys direct from premium growers, private and family farms and distributes these products throughout Wisconsin. They proudly proclaim that "their delivery trucks provide year-round, fresh products sourced from all growing regions.
They work hand-in-hand with both the (NPC) National Produce Council and the Produce Marketing Association (PMA) to ensure that their standards and practices of supplying fresh produce are always done in the most cost-efficient manner.
Today, V. Marchese now owns a 80,000 square foot building near Menomonee Valley, located just west of downtown Milwaukee. Menomonee Valley area is famous for the Mitchell Park Horticultural Conservatory and the iconic Miller Park Stadium — home to the beloved Milwaukee Brewers baseball team.
In addition, they have over 50 refrigerated trucks to deliver their premium products not only in the state of Wisconsin, but, also all over the American Midwest. They are renowned by restaurant owners, grocery stores, fresh fruit, and vegetable markets throughout the Midwest as one of the best, most reputable and most reliable providers of "fresh, natural ingredients" in the entire Midwest region of the United States.
V. Marchese delivers their fresh fruits, vegetables, and nuts to our historic building in Sauk City three times a week — sometimes even more often. They are one of our most beloved Culinary Partners and their dedication to excellence in both quality food and service is one of the reasons our Chef Jeff chose them specifically to be our primary provider of fresh produce. Wisconsin Food Hub Cooperative proudly asserts that they are "Passionate About Food".
They are a farmer-led cooperative owned by the producers of the Wisconsin Farmer's Union. They hail themselves as an "exciting new business opportunity" for local farmers because of their unique, private-public partnership, initiated by local farmers in Dane Country, Wisconsin. WFHC is a farmer-led cooperative who believe in the potential of collective collaboration and the sharing of sustainable, natural and organic farming practices.

The Wisconsin Food Hub Cooperative is also about sharing the stories of the hard-working, dedicated family-owned businesses that share a common goal of teaching the public that farming and ranching can be done in a sustainable, environmentally-friendly manner. It's about producing the best possible meat products, dairy products and the freshest fruits and vegetables — while treating our natural environment with the highest possible respect. The Wisconsin Food Hub Cooperative evolved out of a unique, private-public partnership in Dane County. It began with a feasibility study in late 2010, that was originally funded by a partnership between a federal grant by HUD's Sustainable Communities Regional Planning Committee through the Capital Area Regional Plan Commission. A truly community-government effort to study sustainable, environmentally friendly agriculture practices with the cooperation of a wide range of stakeholders and businesses in the Southern Wisconsin farming belt.
This collective government and community funded effort between HUD and Dane County resulted in a collaboration between owner-operated farms and ranches, and the Wisconsin Farmer's Union, known by the acronym "WFU". It was a true group effort to determine how to best support family-owned and operated farms while promoting Wisconsin food brands. To date, it has been a resounding success.
The cooperative was officially incorporated in late summer of 2012 and provided the necessary resources and information - including a vast distribution and promotional network — to allow family farms and ranches to focus on what they do best — to grow and produce the best foods that Wisconsin had to offer.
In addition to the grant by HUD and the support of the leaders of Dane County, the Wisconsin Food Hub Collective's feasibility study and early business planning were also received additional grant funding from the beautiful capital city of Wisconsin, Madison. Additional funding, support, and cooperation were provided by Madison Gas & Electric.
Additional credit and support were given by "Forward Community Investment", the USDA Rural Development Office's Development team and the UW (University of Wisconsin) Center for Cooperatives.
Wisconsin Food Hub Cooperative is an inspirational model of how businesses, government, private enterprise and educational institutions can work collectively to not only stimulate the local economy, but also how cooperation between the federal government, private investors, and local, family-owned businesses can create new and sustainable ways of doing business.
